Finally have some time to make a little progress.
I only have the bottom printed, hopefully get the rest tomorrow, but here is what I have.

Drilled the holes.

Placed the inserts.

Added the potentiometer just cause for now.

Okay, I went ahead and just finished it!

Now, i'm trying to set this up for elite dangerous, i even got an Logitech extreme 3d pro, to use with this, since i can't use my x52 with this.

I figured out pressing down and pulling up is the Z-axis, and one can assume that left and right is the lateral thrusters, and forward/back should be the front and back thrusters.

The issue that I am getting is that the ship is just spinning to the left, and I'm not entirely sure why, I have centered it back to 0 and even looking at the monitor on Ardiuno, and if you don't know how to do this just hit shift+ctl+m and it will bring it up.

Any thoughts on what is happening or adjustments that I can make?

What I did was have an ON & an OFF mode. When I switch to the ON mode I reset my center or Zero position to the current position of the throttle. This poses it's own problem of not having a constant Zero position.

The On/Off switch could be good for things like FTL and when your just sitting there, I may do that. Did you just do a toggle switch to the signal wire?

Are you sure that you have pots connected correctly?
Bottom pivot arm pot = A0
Right pivot arm pot = A1
Left pivot arm pot = A2
Your ship should move upwards when you are not touching the throttle (Z-Axis).

I changed them all like you said assuming the picture was what you refereed to as bottom right and left.

This didn't seem to change anything, the ship is still spinning to the left.

Maybe there is something wrong with the potentiometer... I'm at a lost here. I'll have to look up how to test and check if they are bad.

Does it behave the same on Windows calibration utility?

They are all wired in series, and are all reading about 3.7 which is to be expected. Soooo that is not the problem.

I have not looked at windows utility at all.
I have looked in the Arduinio control monitor which is CTL+Shift+ M and you can see outputs and changes in the Z X and Y.

The pots should be in parallel, but I think you have them in parallel based on the pictures. Could you upload more pics of your wiring? You should probably do a video in the windows utility, that way we can separate issues with the throttle from issues with the game setup.

Your right it is parallel, been getting ready for finals all scatter brained. :D

Here are the pictures of the wiring, the blue wire isn't connected I plan to do a button or something.
